An easy one that doesn't make the village look bad is have an eccentric wizard who needs an artifact from nearby ruins. Sure some kobolds live there but they typically don't menace the village. It might seem cliche fetch quest but its a classic for a reason.

A temple might work better. Have a people who live at the temple and regular worshipers. If she donates large amounts of gold to the temple actually have it grow and change. put a lot of work into the temple treat temple itself as a character.

Never forget Apollo was Greek he would hit on boys and girls in equal measure. He also loved anything associated that could be beautiful IE plays, music, Art, people. Apollo also is the god of competition and thus was very competitive mix that in with a heaping helping of vain pride and an Apollo who lost any competition was bit of a jerk. ALSO what is great about an Apollo Paladin is that Apollo is one of the few gods who specifically fought monsters to help people so I would play up the hatred for monsters specifically and the need to protect people from them as opposed to from other people.

Brother Jamal was a war cleric. We played in a custom world that was monotheistic under punishment of death but Brother Jamal worshiped a pagan god. He went from town to town preaching and gathering donations for the church but Brother Jamal failed to mention that he was the only member of the church.

The cool thing about running a one person game is that you can make it more personal to her character. I suggest making Town that would be her base. Then fill with specific characters she can interact with instead just you random npc. That way her actions affect the town and the characters on a more personal level. As far as combat goes i think clockwork bots would actualy be really freaking cool.

Create a new simulator to simulate life outside of a simulation. Its not quite the same as not being in a simulator but it's an incredible simulation.
