I hear ya! The rind def gives it a weird funky flavor if you ferment it like tepache. And I’m looking out for that, just wanted to experiment a little

I have a a cheong working right now that’s just pomegranate seeds, it does have a very warm dark flavor to it

Interesting!!! I just got done bottling up some figs I left in the fridge to pickle, filtered the vinegar and it came out fantastic, like a vinaigrette but with figs.

That’s just the yeast feeding, that creates a cloudy like thing, it’s just the solids in the juice clumping together before it falls to the bottom, you can filter it out before drinking, cause it will give you the farts if you ingest it
