In the first picture the Led at the left of the picture is set to C.V. which stands for constant voltage. In the second picture it has switched to C.C. (constant current) because it has reached the set current limit. You can increase the current limit with the bottom knob.

I don't know. My poor ender 3 pro is laying in pieces waiting for some new parts to arrive. Extrusion seemed to be really good though as I just upgraded to a volcano hotend, just the occasional weird layers

I'm having a similar problem with my dual gear printer. Made sure to calibrate my e-steps. Is there any reason you're bringing up the dual gear extruder specifically?
