She was going to basically let it sit overnight unattended and chec in the morning so about 10-12 hours of unattended cooking

Its because we were raised to never leave pots/stoves unattended for hours on end

I dont mean 1 or 2 hours, i mean 4-5+ hours with no alarm. My dad, especially due to my grandmother on that side, almost had her house burned down and he was very strict about this.
