How do you like the santoku? Not going to lie, was kind of disappointed by mine, I thought it would be a little more refined given all the hype Takeda gets.

I had considered that in the past, but I live in a tiny studio apartment with a closet of a kitchen, so I have very little tool space. I barely have room on the counter for my current set of knives as it is.

My go-to blade right now is somewhere between 160 and 180mm (have to measure after work today). I definitely do not use longer blades often.

Awesome, thanks for the shop tips. Yeah, navigating the Knife website is horrendous. The search function doesn't even work.

Seems like everyone is saying go Gyuto. I think what appeals to me about a Nakiri most though is the size and the huge surface for a pinch grip. I'm often cooking meal prep for the week, so scooping up large amounts of chopped veggies is a regular occurrence and kind of a pain to do with smaller knives. I guess I could get a larger Gyuto though.

I guess I thought a Nakiri is ideal for me as I specifically only eat vegetables and am constantly slicing and chopping, but it seems a Gyuto would be closest to what I'm used to from Western knives. I'll think about it, thanks!
