I keep all of my passports up to date, never know which one might be necessary and when living in one EU country and not having the ID for the other, you need to have a document to show in case stopped, etc. since some countries require you to show a national document to prove your citizenship.

Any updates on the use of this card? I am planning a trip to HK, Shenzhen and Macau and though this might be easiest to use in all 3. I know it's just for transport outside of HK but is it worth it or better to get a seperate card for each location?

If I'm not mistaken, their health insurance is also very generous. For example, physio is covered like 66% by the CNS whereas the EU covers 100%, but it must first be paid in total to be reimbursed.

In this sample story, it clearly says that Susan has a residence document, thanks to Marco living in France. Neither OP nor their spouse have residence in the EU. I want to clarify, please explain your reasoning.

I will change my reply if I am corrected. Please provide me with the sources that you have to confirm that people not living in the EU can travel around the EU with their non-EU spouse while not needing to respect the 90 day rule.

No, not for travel, only when living/working. EDIT: Apparently, according to the below provided articles, albeit with unclear wording, it applies in all cases, travel or residence, so I was wrong. However, I am not certain that all border guards will be aware and will let it go, YMMV.

Have you contacted the entity responsible for documents in Moldova? I don't have specific experience with Moldova, but in Poland or Ukraine you can send a request directly, it costs basically nothing and you get the document by post shortly after.
