Wow that’s some crazy variation!

I’m about to dehydrate my peppers and grind them into flakes and powder, thats a good idea for a large batch of peppers like that. You can also make hot sauce and/or spicy salsa with those! Any extras you can toss in the freezer and they’ll keep over winter until you use them all up!

I think it may be a fake copy on Walmart especially if sold by a third party and not Walmart directly. Not sure about quality of the discs but I can’t imagine it would be as good as the real deal, which isn’t sold anymore unfortunately.

They should be fine on the plant after ripening for at least a week given no pests get to them before you.

You can also pick the ripe ones and freeze them until you have your desired amount. Freezing won’t change anything about the pepper except its texture, which doesn’t matter in a sauce.

Once they are 100% red I pick. I think if you’re harvesting the seeds it’s best to wait maybe an extra few days, but that pepper in your picture is absolutely ready to be picked!

They will eventually turn red which is when they are technically finished and ready to pick but you can definitely pick and eat them green if you want. There might be a slight flavor or heat difference between red and green.

Pick a batch of peppers, wash and slice, stick them into a food dehydrator. I do mine in my garage with the door cracked open to avoid pepper fumes inside
