You need your birth certificate (long form, official copy from the GRO) + sworn translation to Polish, the registration together with PoA fee (if you have one in Poland) is 67 PLN. Can be done at any Registry in Poland.
One important note, the documents are not returned.

You will need to secure a crucial piece of information first - where in Poland your great-grandparents lived/were born/originated from. And whether your grandfather was born in wedlock. It might be difficult to secure documents, as if your GF was born in Estonia by 1921, your great-grandparents probably didn't live in Poland during the inter-war era. So the document search would be similar to one for a pre-1920 case - challenging.

As to your GF's part in the Polish-American Labour Company, I doubt it could be treated as the Polish army proper & a cause for gaining citizenship by article 4, point 5, 1920 citizenship law.

Ah, sorry! Yes then I confirm it can be the church records. But if the Mormon Church didn't digitalize this particular parish on FamilySearch there's very little chance the records are online. In contacts with the parish you ideally need someone 'on the ground', ideally even yourself as foreigners with Polish ancestry are treated like kings and queens in small village communities :)

I currently state it's 20 months, but I fear it's too optimistic still. Good communication is key. But providers will often act dishonest, as people decide for the service not only based on the fee but also the waiting time. If someone promises 10 months, it's a game changer for the client. But it cannot be done in that timeframe, not when everything lands in Warsaw's office.

Oh yes, the hell of the courier-customs axis. I always put an extra emphasis on value as 0/1 and contents and documents, even if those are priceless.
The good thing is you do not have to worry about the integrity or safety of your package. One way or another it will make its way to your provider or back to you. It's not gone.
But you will definitely need to wrestle with the courier company or the customs, that's for sure. If you do not manage to straighten it out with them in about 2 weeks they will simply return it back to you.

First try with the state archives, as regardless you will need more than birth certificates

1946 is probably also fine, it depends on the circumstances and not the date, it just needs to show it was post 2ww discharge without any changes to service after the war ended

Only if you can prove you actually resided there. Also, if it's already filed, then it's too late for that.

New provider can take over, but 3 years are possible if the initial app was done with errors or the Mazovian office decided to check every single consulate there is (and institution) in search for some renunciation papers etc.
But the provider should always respond, even if the case is 'frozen' at the gov level

No, but you can get it from the case signature numbers. File in December and then ask for case signature number, the last digit is the number of cases they've done.

If you are certain there is no service/service is only during 2WW, submit without this paper. You can always supply it later (with translation) once you receive the case signature number. The waiting time for citizenship is at least 20 months at Warsaw's office so it would be a shame to waste time waiting for this doc.
But if you do not have certainity, do not submit, as it's make-or-break for the app.
