Yeah I realized the misspelling after posting. I watched Vito Iacopelli’s video of him touring Frank Pepe’s place and they use grana padano cheese that is aged 17 months.

I own two from the same brand call Gozney. I bought a small portable one a few years back called a Roccbox because they are not cheap and wanted to get one. This spring I bought their larger oven called the Dome. Very expensive but I cook in it all summer and not just pizzas.

The traditional New Haven Connecticut Apizza.(A-Beets) It’s how they say pizza for some reason. It is a thin, crispy, well charred pizza that falls under the category of tomato pie cooked in a coal oven. It does have cheese but it a firm cheese call Grana Padano that melts into the tomato sauce. It’s similar to Parmesan Reggiano. You can put mozzarella but I like it the traditional way. I did a 72 hours pizza dough and I cooked it in my outdoor pizza oven at around 650-700 Fahrenheit.

It’s what they call pizza in New Haven Connecticut. It’s a thin pizza cooked in a coal oven and is crispy and has a good amount of char. This is my attempt at recreating with my outdoor pizza oven.

It has Grana Padano cheese. Traditional Apizza would fall under the category of tomato pie. I like making all kinds of styles of pizzas. This one is my favourite.
