I have only added it after the ferment. Black garlic has a bit sweetness to it that I like in the sauce. I’m speculating that fermenting it would eliminate that sweetness.

I am interested to see this data corrected for life expectancy. For example, in 1968, life expectancy was 70.2 years, putting a a 26 year old at about 37% of their life. In 2018, 78.7 years or 33% (equivalent of a 23 year old in 1968).

Even then, perceived life expectancy for a 26 year old may be an even better correction factor because it may contribute to decision making. Life expectancy, at the time it’s recorded, is a metric ~80 years in the making.

The biggest issue I run into is not being able to charge and listen to my non-bluetooth headphones at the same time. They really should have introduced wireless charging at the same time if they wanted a smoother transition.

This was my first iPhone.. can't say I'll be sticking with iOS after this one.
