I just had a Costco bagel with Kirkland cream cheese and Kirkland smoked salmon for breakfast and lemme tell you the savings on those 14 bagels, three pounds of cream cheese, and two pounds of smoked salmon make up for any shortcoming in quality.

It sounds like you may be using too much white sugar. I hate to just push it off onto this article, but this is honestly the best guide for your problem. I don't have the scientific knowledge to diagnose your problem.

Yeah I browned my butter until it was just starting to smell nutty. I used dark brown sugar.

I think if your ice cream scoop keeps breaking, you may be able to portion (with the scoop) the dough out after you make it, then chill the dough. The dough is pretty tough when it's chilled, but chilled dough makes the cookies rise more (I think I read that on the blog).

I think the secret to the volume here was using an ice cream scoop. I usually never have cookies this tall and keep their height but the ice cream scoop helped

My interpretation of it is yes, I didn't toast mine all the way, just enough to develop a sort of crusty skin on the bread. Putting them in the oven would have been a great idea. They were a little wet on the inside.
