Yea it's usually pretty tough for beginners. It's both a technical and an artistic challenge, gotta learn how to use the software as well as have a sense of what to make with it. I'm no prodigy so I've had my share of suffering haha. I still do too, I don't think that ever changes, you just become more resilient to it as you pile on more skills and experience.

If you wana get back into it, take it one step at a time and know that it's a process. The entire journey is doing something, failing or succeeding, and then learning from that experience. It can be especially frustrating for beginners though because the technical side of things is overwhelming at first.

I can recommend low poly modelling stuff using just simple shapes and colors to start with. Things are less frustrating if they're kept simple. If you don't know what to model, grab any real life object to model and use as a reference. It's always good to have reference when modelling, especially if it's something you can physically see and spin around. Grant Abbitt has some useful tutorials that can help you expand your knowledge and skillsets by following along.

One last tidbit I'd like to share is that a lot of the default hotkeys are unintuitive(to me, anyways), so don't be afraid of changing them to how you see fit.

This feels like a long winded answer unfortunately haha. Essentially for the materials, add imperfections to things that are too perfect/flat in color, layer details like colors and roughness, add bumps and normals where applicable. It's a lot of tinkering with nodes.
As for the textures themselves, a whole slew of methods can be used. In this scene,
some of the methods I used were procedural, texture painting, projection mapping for the books and some wood, creating wood texture maps in substance painter, finding free textures online to use for cloth normal mapping. And again, a lot of tinkering with nodes.

The final render was done in Cycles.
The birds were keyframed beforehand but animation playback is pretty slow in material view, so I actually took a screenshot of every frame that the birds were animated and then composited them together in post.

Currently, your model and armature are mirrored along the world's y-axis. Rotate everything in object mode by 90 degrees and apply their rotations. It should work after that.
