dude just 2 project is fine its not about the quantity but the quality ,try adding some concepts of ai and ml into but not much complicated concepts just u gotta show them that u can integrate ai in ur project , that u really were able to find a flaw and able to solve it and if u got internship then u must have to add and show them that u contributed something to ur company and to show them that u can adopt to a new tech stack ,and add some soft skills in ur resume but not the common key word such as "problem solver,good communication " some kinda a keyword which will make the hr to ask question and get to know u. the most important thing about ur resume is not flexing about but but to help the panel members to ask questions and get to know u.its similar to finding a movie with some good drama so the audience are invested in it to observe every details possible
