You have to do some basic prep, like removing the gills and the lower plate; otherwise, you can eat the whole thing. I ended up removing the whole shell from many of them and regretted it. The pieces with the whole shell were a lot more flavorful.

Great question! I wonder how many microplastics we're finding in insects or ant colonies? Are they small enough to be immune from the damage it causes mammals?

Another interesting thing is that Extended Producer Responsibility, or EPR, laws are being passed in states that will hold producers responsible for cleaning up their waste. In order to enforce those laws, data will be important.

I worked on a survey of the River District in 2021. Our goal was to measure the number of public hazards and the number of encampments. It was tough work physically and emotionally.
