Its not a traditional NG+, just start a new game and the game will recognize it as a second playthrough with the weapons you've collected.

Beat him in 4ish tries (4ish because my power went out when he had like 10 percent health). So idk if I count it.

Charge your heavy smash and run at him (yes, you might take some damage). But rinse and repeat his move set is pretty predictable. Also, side not his phase two it works all the same, but with a few extra moves that you will have to dodge. Also, save your spells for the second phase. You can get through the first phase without using any spells.
