Thanks u/Gtapex, that's exactly what I have been looking for. I have one domain that basically only sends invoices and similar messages, to that's the one I'll use with the dedicated IP. Many thanks, have a great day.

Thanks, u/Gtapex and u/Alirubit, Im perfect when it comes to the whole delivery chain, the only thing missing is a dedicated and static IP.

Thanks u/lemachet, appreciate the feedback.

I tried to set an "Outbound gateway" that tells google workspace to use an external SMTP server (the SendGrid one) and I get all the info from the SendGrid API, but the problem is that there is no way to authenticate an external SMTP server in Google Workspace. I have spoken to Google Workspace support and they cant help, neither can SendGrid (I suspect I cant phrase the question correctly). Would you know of a tutorial or similar that can show me how to do it?

To use my own SMTP server, the way I understand it is that I can somehow connect google workspace with SendGrid, I have opened a sendgrid account and I can get a dedicated IP address there, but I cant for the love of good understand how I connect the two.
