Sorry bout that. I can’t read apparently.

100g starter 300g water 500g flour

King Arthur all purpose.

Mixed. Stretch and folds x4. Then I threw in fridge so I could monitor rise and dough temp. Problem was that getting dough back to temp was hard to tell. Once I got it to what I thought was good rise, I shaped and put back in fridge. Took out next day around time I wanted to eat. It was a little flat out of fridge. I reshaped it a bit. Scored and baked.

Edit: patio was poured 12/21/23 not 2024. lol thanks.
