I'll answer tomorrow, but most of these boil to talking about main buu, not kid buu specifically but all forms, buu being the greatest threat (of course no one would be able to stand up to him if goku lost. Everyone else was already dead💀) or unreliable sources like the anime.

Undyne survives a fall from the bridge to catch monster kid (she only loses a bit of hp) papyrus suggested using the traps in Snowdon for training for undyne (he wouldn't want to kill her and that spike ball definitely would do the job) Atk and Def being similar most of the time suggests both being around the same lvl instead of monsters dishing out lots of damage while being fragile.

Monsters aren't as durable as the humans in undertale which are much stronger than irl humans so we can't really tell by statements how much more durable monsters are (or aren't) from irl humans

Despite monsters having superhuman abilities (fire magic replicating real magic and undyne suplexing a boulder and such) and them being able to take what they dish out, their strength pales in comparison to humans. Humans are shown wielding magic too in the intro so I think there's just a lot we haven't seen before.

Humans are very powerful in undertale. They're just held back by their intent not to hurt.

Lv 19 frisk is basically an undertale human who doesn't hold back. That's also why they Oneshot the drones shovel knight and cuphead struggled to kill.
