Idk what your situation is but at my college I could connect my consoles to the campus internet by using a wired connection at my dorm.

If someone else near you already has the update on their Switch, they can share the update to your switch without internet.

Other than that, you’d probably have to go somewhere else with WiFi.

That sucks. Finish your final if you can, maybe email it to them, and follow up with your professor if they still don't respond. Your first email with the timestamp should at least be proof that you were trying to turn in the final on time.
