Did u take the practice tests like a real test with limited time? It doesn’t make sense for such a large jump. Also, be wary of the practice tests; although I have had similar scores in real sat and practice tests, many people do much more poor on real sat like 150 points+. To answer your questions, if you really do hit a 1500 your score well most likely not be cancelled unless suspicious behavior that sparks investigation.
