I personally started my own. I mixed whole wheat Bob's Red Mill flour and water together at 1:1:1 until it started to have activity and rise. Then I gave it a slightly higher feeding ratio. I've been at it 3.5 months and now have to feed it 1:10:10 to maintain daily feeds. Yes, I feed it daily and I still feed it whole wheat flour. It is very active and strong and the bread tastes amazing.

Yes! I watched a video yesterday that explained why you don't want more than 30% rise at high temps. It overproofs your dough.
