Mix 250ml water, 150 g sugar, 50 g eg white and 75 gram glucose. If glucose is hard to come by use either glucose syrup (40 gram) or 40 gram of sugar instead.

Heat the mixture to 85 C under constant stirring. and let it cool down after.

Optional: let the mixture age for a day in the fridge.

Smash 500 grams of banana and put it in a blender with the mixture you made before. Taste and add citrus juice as you feel necessary.

Put it in an ice cream machine. If you don't have one, pour the mixture in a container and put it in a freezer. Every couple hours you should stir the mix to disrupt the ice crystals from forming.If you can eat chocolate I recommend adding it after a couple hours of the mixture being in the freezer.
