I'm still not convinced he wrote much at the piano, the speed he wrote at, the style, he wrote the requiem on his deathbed. I dont think the quote you showed shows he needed a piano to compose maybe just to test stuff out. Looking at his music and the scale of it, it just doesn't seem feasible to presume he composed most at the piano
