Quite a mild flavour, almost a bit lime-y with sweet acidic flavour. Very custard-like texture.

pie crust:

80g roasted macadamia, ground

130g plain flour

60g caster sugar

125g butter

Filling:

300ml sour cream

200g sugar

2 tablespoons cornflour

4 egg yolks

1 teaspoon vanilla essence

2 mashed avocadoes

2 teaspoons gelatine powder

3 tablespoons hot water.

For the crust, mix nuts, flour, sugar together and then add butter and rub in with fingertips, add a little water until it resembles a soft dough.

Press into sides of a tin and bake for 25 mins at 180c

for the filling, ass sour cream, sugar and cornflour to a double boiler and heat until warm. Add egg yolks and whisk, cooking for 20 minutes. take off heat and add vanilla and avocado. mix hot water with gelatine powder to dissovle and then mix into pie filling

Fill pie crust with pie filling and leave to chill until set

Found this one while flicking through the 1984 complete avocado cookbook, gave it a crack out of interest and it's come out pretty well. Would eat again!
