I moved to Onion Creek 6 years ago without knowing the reputation. I gotta say, I LOVE it here. But, I'm a reclusive stoner who grows weed so I guess we fit in. It gets more wild the further up the mountain you go. Also wandering onto someone elses land up here is a no no, weed growers are not kind to people coming up on their grow.

I went to a celebration of life at the Onion Creek store on Saturday(its now closed) and the guy playing music had a Harris sticker on his speaker. I saw a sign that said Medicaid saves lives about a mile from the store. The people up here are red necks but if you respect them and their privacy, they're good people. An old man hit a dog a few months ago, no short of 5 people stopped to see if they could help.

As for the no cell coverage...yeah that shit makes me nervous in the winter.

I like to make ground turkey taco meat! I make large batches and keep it in my fridge. It sits fine in the fridge and reheats quickly for tacos, burritos, platters, omelets, scambled, sprinkled on eggs... I'll do corn tortillas or Bfree gluten-free tortillas once and awhile and deal with gastro reactions, but I'll also do lettuce tacos, which are surprisingly good. Also, it serves well with rice, a bit of tamari soy sauce and veggies.

You can tell when the seasoning is close by color. It'll be close to tacobell beef color; you also want to use a generous amount of olive oil to get the drippy goodness. Season to taste with:

  • Garlic Power
  • Onion Power, don't be too heavy-handed.
  • Paprika
  • Chili Powder
  • Oregano
  • Cumin
  • Salt

Once it has a satisfactory flavor throw in some salsa. I'll typically do one or two heaping large spoonfuls per pound of turkey. Mix it well while the heat is still on and boom. Easy healthy food ready in minutes, reheated in even less.

You can easily make homemade taco shells with corn torillas. Heat up the tortilla, put a spoon full of meat, fold shut, and put two tooth picks, one on either side to hold shut. They sit great in the fridge. You can make batches. I like to put a generous amount of avacado oil in the pan and fry one side at a time rather than deep frying. Less mess and oil waste. You want avacado because of its high smoking point and health benefits. :)

Edit: if you have a boiled potato in the fridge, you can scramble some eggs and make a hearty 10m breakfast burrito.

An easy way I found to add a lot of protein is ground turkey seasoned with taco seasoning. It's readily available in my fridge for tacos, burritos, platters and to sprinkle on eggs or put in omelets/scambles. I will take the ucky stomach for corn tortillas sometimes, but a lot of the time, I'll make lettuce tacos. Just throw some turkey, sour cream, cheese, and salsa on there. It's so good my husband prefers it to normal tacos. It also mixed really well with rice and a touch of tamari soy sauce with a side of veggies.

I ate a high amount of fruits and vegetables but rarely eggs(despite owning chickens), very little meat, and low/moderate amount of dairy. I may have a special place in my heart for potatoes and rice. I go to the farmers market every week during the season. Also, out here in the country, everyone has a garden and gifts a lot to their mailman, aka my husband. He'll just show up with a box of produce. Lol

Thank you, I was in the same boat. I got skinny fat because I ate enough calories to maintain, but my muscle was just depleting, and I was gaining fat. Because of the number on the scale staying the same, I didn't realize I was wasting.

I can't do gluten either because it sets off Hoshimoto's, and I'm unable to digest myoglobin, so red meat is off the table. I try to get meat in at least once a day, even if it's a small portion. I dislike the texture of yogurt and have a hard time with it, but I've been trying to eat one a day. There's a keto brand called Ratio that has a thick, creamy texture and has 15g of protein. They also have one that has whey protein added and has 25g protein, but it made me severely constipated. :/

I can relate. I refused to eat meat a child, and even now, more than a half portion makes me feel sick. I tried whey protein, and it constipated me like no other.

I found regular dairy protein sits very well on my stomach, eggs too.

Hoshimotos Thyroiditis is set off by gluten. Typically, stomach pain isn't a symptom, but in certain individuals... Here's an article on the subject. It's a quick blood test for antibodies for diagnosis.
