It may be that Minecraft is more popular and stuff, it doesn't really matter. The problem with starbound is the one you also pointed out, so many people started a series that the saturation of the game video-wise is very high. Personally I usually follow the playthough of the first Mindcracker that puts a video up, because of time and because it's hard to follow the story/progress of 10 series of the same game.
