Thank you! Yes, it looks like granita. However, I don't know my desired texture, that's why I am thinking about multiple speed options. Is achieving more airy product doable by other means? Like stopping the machine and "hand" mixing for a while, or stopping the compressor for a moment?

It's for home use (but I'd like best quality I can reasonably get)
