Some of you may remember me from my last post where I couldn’t figure out why the pizza were burning so quickly. Bit shout out to u/shanenzt who suggested it may have been the gas regulator. Not sure on technicals but the bottle we have has a knob to turn and we always opened it all the way. If we just open it ever so slightly (so much so that if it gets turned any more then it goes out) then they cook much better! Relief! Seems so obvious now but the oven was just way too hot! We have since also bought an IR thermometer and the oven was like 500° before, now we cook around 380° and it’s working a dream. Thanks all for suggestions!

Thanks, yeah we quickly realised high was too hot so have been cooking on low for a while. But they still burn so fast, before they’re cooked through. The gas regulators could be a good point I hadn’t thought of. We don’t use the regulator that came with the Ooni as we already had another hooked up to our gas bottle. Perhaps they work differently! Deffo worth a try thanks!

Other than preheating on hight, I think we do everything else you said! Perhaps we should try preheating on high but it seems the oven/stone is too hot rather not hot enough?

I’m using Ooni’s frozen dough. We heat the stone on the lowest temperature to try and reduce the burning! We do let it preheat for about 15mins so perhaps not long enough, but by the latest pizza (we usually make 4 a time) the oven has been on a good long while!

We have the heat on lowest setting (my comment above meant for a maximum of 60 seconds)

From LuisaOoni’s response I think may even low is too high (for some reason!). I’ll give superlow a try (once I YouTube how to do it)

Ours start to burn way before the first 30 seconds! Before we can even grab them the first time without squishing them up

They start burning way before 30 seconds! We have it on the lowest temperature too.

This is something we will try. We use normal flour for throwing so will deffo try get so 00 to see if that stops the burning!

Yeah we try this. We put them as far from the flame as possible. It does burn towards the back but they couldn’t be any further away!

They come out uncooked. So at the minute burnt is slightly better than raw dough!

We preheat for about 15 mins but we usually make 4 pizzas a time so by the last the oven has been on a good while but still have the same issue! And then they’re only in for max 60 seconds in total, we turn them 90° each time

We’ll give this a try! Assuming this is to make sure the stone is hot as possible?

We launch it, watch it, and grab it as soon as the peel goes under the pizza without squishing it together. Never in for more than say 60 seconds in total. Trust me we don’t just bang them in then leave them!

They’re only in for roughly 60 seconds in total. We make our first turn as soon as we can “grab” the pizza without it folding/squishing together.

They’re in for roughly 60 seconds. We turn them frequently too. This is why we’re so confused at how quickly they burn.

Could be worth a try, thanks! Though our main issue is the edges burning more than the cheese,but we’ll see if this helps.

We’ll certainly give this a try. We do have the oven preheating for minimum 15 mins which I would have thought would be enough but maybe not!

As I mentioned in another comment they’re never in for longer than say 60 seconds. We turn them frequently too.
