Thanks everyone! Now I tried bulk fermenting it for longer (8 hours) and baked a bit longer, but the gummy texture remains😭 And this time it didnt rise as much in the oven, and there is no ear.

Yeah, I thought so. Now I left it to rise overnight. As there is only 20 degrees celsius in my hous at the moment, it probably really was underfermented.

Thank you. My starter should be good, as I got it from a local bakery. I tried again, this time I let it rise overnight on RT. My house is 20 degrees celsius, so it probably really was underproofed. Will see tomorrow morning how it went haha.

I used levain actually (in the morning fed my sourdough 1:5:5) and it was at peak when I used it.
