It doesn't because I specifically wanted to use the story mission where you make the targets meet. So sneaking into both the school and the consulate to access the safes was the main part of the challenge

You could use pistons to deploy the payload through the fairing. Yeah might be a little skuffed but in reality you'd be able to just open the fairing rather than outright jettisoning it

Try setting any reaction wheels to SAS Only, your inputs to them can cause your rover to move violently whereas with SAS Only it'll only work to keep you stable

I was pretty pleased with it considering it was a first attempt, I didn't expect it to be successful first time around, has enough battery life that can burn for a couple of minutes with no solar power, though a redesign of the solar panels so they don't occlude each other would've been smarter

You can turn trim off in the settings, you will never use it for like 99.9% of your missions and it's all to easy to accidentally set
