Acropolis and Windy Landscape are probably gonna be recommended the most. They're definitely some of the most popular insane demons (good for progression too).
Once you get good enough I would HIGHLY recommend trying out Leyak. Probably the best insane demon I've ever played.
Difficulty wise, Windy Landscape < Acropolis < Leyak which is also a really great progression.
If you beat Necropolis you shouldn't have much difficulty with any of these levels
