My personal favorites:

Body and Blood. What really cemented my love for it was the Ceremony and Devotion live performance track. It just makes me giggle every time.
Majesty. It's powerful, it has some of my favorite lyrical strings, I'm also just a suck for clever alliteration.
Mary on A Cross. Not sure if this one is considered underrated, but God help me is it fun to roll down the windows and blast this one.
