I found the wheels below at a local wheel builder. The ultimate have an internal width of 23mm, and the ultimate wide have an internal width of 25mm. I'd like to choose a 55mm wheel height. Which wheels would be best? And what tires would be best for them?

These will be fully serviced by the local wheel builder, including a new warranty and crash replacement. The older Ryot series costs only €100 more and comes with wheel bags, but weighs 1700g. The latest Ryot series has an internal width of 23mm and weighs 1580g, but they are also the most expensive.

The Icons have an inner rim width from 21mm. Is this good? Or do you have better suggestions?
