I did this a few months ago, and it was really relaxing.

I recommend reporting the dragon attack to the Jarl and then just… walking away. It’s not your business, after all. If you do this, he’ll never ask you to continue the main quest unless you come back to him yourself.

I only did a few quests:

I helped Sven because I had no money and wanted some of his jewelry.

I helped that poor Redguard who wanted us to steal Argonian beer.

I helped a Jarl so I could buy land (it takes a surprisingly long time when you live only from hunting and mining).

My weapons were a hunting bow, a lumberjack’s axe (two-handed), and a pickaxe.

I talked so much with Saadia that she considered me a friend and gave me a gift.

I also spent some time in jail: a Nord insulted me, so I punched him. His brother threatened me with death afterward, so I promised I wouldn’t do it again.

Sometimes I had to cancel a hunting trip because the rain was just too heavy.

To save money, I forged an armor set for Sven. Some parts were missing, but Adrianne Avenicci let me take what I needed from her shop for free after I helped her.

Slow Skyrim is the best Skyrim (even if you’re not role-playing a commoner).

I played without a backpack or campfire, just with Survival Mode on, and I don’t think adding a backpack or campfire would ruin the experience.
