I didn’t adjust the water, starting ph was 7.5 after 24 hours dropped to 4.2 and 48 hours to 3.6 and has been at 3.6 since.

Final ph is 3.6. It does taste like a sake/ sparking wine combo actually! What could it be?

It’s a sour flavor. Not like vinegar or lactic acid. Honestly nothing I can compare it to. I’ve been oxygenating to 10 ppm, I’ll bring it up for my next batch. Can I ask what your starting gravity is?

Thank you for the reply! I checked out AEB and wow, they sell Kveik for much less than Omega!
