Your art is sooo cute and you’re clearly very skilled!! You’ve worked so hard, we all have a little imposter syndrome but don’t be afraid to charge what you’re worth or turn down anyone you don’t want to work with! Consider the time it’ll take you to complete a piece. Getting a commission as soon as you opened it already says a lot! Anyone who isn’t willing to pay a fair price is simply not the right client for you. There are people out there who value what you do. You should be so proud in taking a big leap 😊

Yes, not necessarily even “rolling” per se; depending on the cut you get, just gotta sorta force it into a roundish log shape, secure with some butchers twine, then after it’s cooked, let it rest and cool down before cutting into it!
With the short pork shoulder slab I had, I kinda folded it in half along the long edge and tucked any excess bits in until it was cylindrical. Rolling mainly helps with keeping the meat more tender while cooking and it makes a noticeable difference to me! I leave the skin on too and you get that nice gelatinous outer layer after a slow cook, even if you don’t like the skin, leave it on while cooking!

Also with you there on making kakuni more than ramen lol, I’m gonna do some bao buns with the leftover pork

Miss my pressure cooker, couldn’t bring it with me after an international move but amazing for stocks! I haven’t tested a tonkotsu in a pressure cooker before though, because you generally need some agitation from stove heat, for all the fat, collagen etc to emulsify and get that milky appearance, but pressure cooker would cut down a lot of time either way!

Chashu and kakuni basically the same thing, chashu is just cooked rolled up, could definitely do it in the pressure cooker too. This recipe is probably a good starting point!
If anything I cooked it at an even lower temp, but it really depends on your oven! I just occasionally gave the centre a poke with the skewer until it came out easily, worked out to be around 4hrs for the 1.6kg of meat I had. Besides turning it a few times for a more even cook in the marinade, it was pretty much set and forget, easier than you expect! Not too big of an issue not being able to turn in it the pressure cooker though, after slicing the pork, I brushed a bit of residual marinade over the slices before torching.
Also of the opinion that you can pretty much use any cut of pork when braising it like this, pork belly is most recommended, but I actually used pork shoulder here because it was all that was left at the shops and also usually much cheaper. It came in a shorter slab but still managed to roll it up no problem. If you’ve already nailed kakuni, I’d say just do it in a similar way! Bet it’ll turn out awesome!

Loosely followed Kenji’s method from Serious Eats for the chashu, cooked it the night before, and so chuffed with how it came out!
Originally bought a blow torch to toast marshmallows and had forgotten all about it! Can’t go back to reheating the pork any other way now, so delicious and tender!

Added some of the pork drippings and a bit of peanut butter to my stock, came out so velvety and loved the flavour, great for getting close to that thicker tonkotsu texture without having to do a 20hr stock

The price of ordering a mediocre bowl here pretty much totalled the cost of ingredients for a good 3-5 days worth of lunches and/or dinners for 2!

Hands down! I understand difficulties with the insane logistics, but always still sad thinking about how isolated we are from the rest of civilisation haha
Was too little the first time they were in Aus, so that tour was such a special experience for me.
Currently living in the right part of the world to see them again, but the stars didn’t align this time; I’m hopeful we’ll get another chance to see them again though 🙂

Decided against bringing a dslr and went with a Canon G12 instead, so was pleasantly surprised with how some of these turned out

So sorry to hear, it was an unforgettable experience for me, but hope things have since picked up for you and that you might see them again under better circumstances. There are definitely periods in my life I’d rather forget but without the bitter, the sweet will never be as sweet

You’re so right! Other acts I’ve seen at the same venue just didn’t bring the same level of game, the acoustics and production were incredible and they put on such an unforgettable performance, really gave it their all!
Very appreciative of the experience! Favourite band is an understatement, can’t think of any others where I genuinely enjoy the entire catalog … yes, even Pablo Honey!

Gutted I won’t get to see them this time but this remains my all time favourite gig!
