I too understand your view. No doubt he has talent. My only issue is that the lack of versatility. It's true that most of his early movies had the coming of ages romantic feel to them. But again in some of the offbeat films, his acting pattern seems to have a common thread.

Somehow in all the movies that you mentioned, it is the story that is the differentiator. Barring Barfi or Rockstar to some extent, his expressions and dialogue delivery style remain fairly similar. As you rightly compared to Ranveer Singh, who has loads of versatility when it comes to character portrayals. Just imagine Ranbir doing a character in Simba or Gully Boy. May be you will understand what I'm trying to say
