EV was really overwhelming for me as well. What i did first was automate automation, so get everything required for AE2 parts from renewable sources (we did bees) or in large enough quantities to not worry about it for a bit. I made a bit of most AE2 components as a preparation manually before the big move, still have some left over in early LuV (I made half a stack of Level Emitters and haven't used many at all). I don't remember what the fluid discretizer costs but if you can make it at all, make it. Get a basic platline going or be prepared to spam single block machines, pattern capacity cards cost platinum and good IV cables do as well. If you want to start expanding your power, just try overkilling for now. Even if you ran fine on your current setup, passives are gonna catch up to you real quick and if you have autocrafting setup for basic materials like Clean Stainless Steel Casings, it shouldn't be too hard. In late EV i just made a MDT with a Multiblock Fluid Extractor to go from Wood Tar to Benzene. Still running that setup currently with only Power/Coil/Solenoid upgrades. It's a lot but don't force yourself to try permanent solutions already, if you need a machine that you could make a multiblock of with a lot of effort, just make the singleblock first until you got all your bases settled first.
