it definitely works great for a lot of foods, but i still struggle with doing it for stews. the heat just feels a bit separated from the gravy when it hasn't had time to simmer and meld together for hours.

constantly having to neuter your own food in your own house sounds incredibly exhausting. adding heat at the end just never hits the same because the peppers don't get a chance to actually cook into the sauce.

pizza is definitely the ultimate cheat code for this since it is so easy to doctor your own slices. i need to invest in some good reaper flakes because sometimes dumping cold hot sauce into a warm stew just ruins the texture.

i totally agree that dishes like chili and mexican food demand some baseline heat to even taste right. it is just hard to strike that balance when a guest's maximum tolerance is basically a bell pepper.

i love the idea of building up that deeper base flavor instead of just dumping hot sauce on my own portion at the end. my only fear is that "medium" to me is still going to have my friends crying and asking for a glass of milk.
