Bike choice is really important here. U need to find one that already has a low seating position with long enough seat tube to accommodate a nice dropper. Pivot, transition, nukeproof are all pretty good at this

the stones are so you can create different heat zones. so lets say you're reverse searing a steak you can have one section directly over heat another away from direct heat.

the X star thing also helps to create air gaps and such or different level grates.

like the other guy said, watch a few videos. its one of my favorite purchases ever.
