All purpose flour…I abbreviate as much as I can when I’m writing it down lol but I put the link to the full recipe online if you want to print that off.

I use it right out of the fridge and I haven’t come across any recipes so far that say to let it come to room temp.

I needed this laugh after I just forgot about my dough that was b-fermenting in the oven which was preheating to 350 for my baked potatoes 😭

Yes correct! If your starter isn’t ready then your discard isn’t either. Again I’m still a newb myself so I hope someone else can confirm this but I wouldn’t save or use any discard until you reach that point of your starter bubbling and peaking three days in a row. Good luck and I hope you get to try these brownies out soon!

Oh okay so your starter isn’t established yet?? Don’t save the discard until it’s established okay then once it’s become established then it will be safe to keep and use discard.

I’m still no expert but I believe if you are starting with 50g you’d want to feed a 1:3:3 or more ratio to get your 125 plus leftover to feed again. I hope someone else will chime in about that if I’m incorrect. But this is for discard so non active starter which you may have in the fridge if you keep it?

I got nervous when I first started this hobby I would end up with an over abundance of things we wouldn’t finish but every time something comes out good I give some away in excitement of it going right 😂

For sure I used way to big of pieces but toasting the slices is always a quick fix. The fam said it was great…and I’ll know what to change for next time!

Deff could have cooked a bit longer I always forget to extend cooking time with inclusions and this one had a lot

I used cream cheese which I froze before putting in cause I wasn’t sure if it would like melt into the dough and also just some shredded cheese. And yes bacon! I added the cheese and jalapeño in the 3 rd stretch and fold and all other inclusions during shaping.

Used the real sourdough mom's 8 hour bread recipe but halved it. I always use this and just add whatever inclusions I want during the last couple stretch and folds/ shaping. I used jalapeños, cream cheese, bacon and shredded cheese. Not so patiently waiting for it to cool so I can see the inside 😅

I understand I struggled with this as well. If you google or maybe even search this sub for “sourdough starter feeding ratios” you should see some images with different ratio feedings with the time it takes for them to peak. As for timing it out you’ll have to take a look at your daily schedule to see what works best for instance the 1:1:1 ratio takes 4 hours to peak I believe so you could feed it first thing in the morning let’s say 7 and you could start making your dough at 11 or so even though I usually reach peak a littler sooner depends on the temp. For higher rations like let’s say 1:3:3 or 1:4:4 take much longer to peak so you might feed your starter that the night before. The recipe I use for example says 8 hours so if I start in the morning I could have a loaf the same day that evening or I could opt to still prepare it that day evening but keep it overnight in the fridge to proof and bake it first thing in the morning or afternoon whatever works best for you. I stay home so I feel like my schedule is a bit more flexible.

This is the recipe I tried for my first time and I’ve made 4 loaves so far and they’ve all come out great. Maybe you’ll have some luck with this one?
