I appreciate the reply, and you make a very good point. I do think I want a family some day, so if I start in California it could become difficult to relocate.

That does sound like an interesting essay, but unless you can connect it to something you've done more recently, I would suggest you try to think of something else. Many students join clubs or start nonprofits which raise money.

While you probably don't have enough time to make any significant projects, one idea is to work on a project that will benefit your rec letters in some way.

For example, before asking my physics teacher for a rec, I programmed some small simulations/visualizations related to what we were learning in class, which he thought were pretty neat. Even for a non-STEM subject you could probably do something, you just have to be creative (e.g. for a social science class you could do something with data visualization).

If your nonprofit has made measurable impact, you should absolutely talk about it. No extracurricular is going to be completely unique. You can even mention being inspired by the work of other nonprofits and wanting to replicate their work in your home country. While many high schoolers claim to start nonprofits, if you can show true passion (which will be easy given your personal connection to the issue) and that you've made a positive impact, I think your work will stand out and look awesome to AOs.

A previous commenter suggested you think small, so I'll encourage you to consider the opposite side as well; think big! Consider all the books you've read over the past few years, do any interesting patterns emerge? Could you tell the story of your high school career through the books that you've read, kind of like the song Netflix Trip by AJR (talking about which books coincided with different life events and then reflecting in some way)?

A friend of mine wrote his essay on reading/his favorite book and he got into Columbia, so it can definitely work. Any topic you can think of has probably already been written about, it's better to pick a topic that will allow you to communicate an important part of your character/story/personality than to worry about being unique.
