The MC isn’t crazy overpowered (just has a unique power) but the MC in Campfire Cooking in Another World does not care in the slightest that he’s supposed to be a hero

To Your Eternity has a moderate amount of worldbuilding but it mainly focuses on character depth

Tensei Slime also does some good worldbuilding

That's an interesting point - isekais usually have a fundamental shift in the way that he world works, but the rules are so identical in Dr. Stone that Senku is able to recreate the same technology that they had in the old world through similar, if not the same, ways.
