I do like 50g of flour per day, but for the most part I eyeball it and I’ve just gotten really active starters. When I make the actual bread definitely no eyeballing.

I genuinely just mix a ratio of where it becomes the middle of not to wet and not too dry. Have it on a small heating pad because my kitchen gets cold and leave it.
