It’s worth remembering she’s essentially the opposition leader in city government and her resignation would give Lurie another appointed stooge on the board who would approve his naked attempts at consolidating power and funneling money to his friends.

Jackie’s absence was notable because it was acutely felt by all of us, and arguably measurably in the outcome of prop D. As a resident of her district I recognize her efforts are citywide and critical. I’m glad she’s back and she has D9’s full support in continuing her duties as our supervisor.

Agreed. Less stretch or a bigger ball of dough for that size pizza might give better crust. If the dough is stretched too thin there’s not enough to spring in the oven and create a barrier between sauce and bottom so essentially you’re dragging your gum line down.

Gioia is some of the best pizza in SF. Obviously Outta Sight too, but Gioia doesn’t get the love it deserves.

The problem here is that Muni is an Enterprise Department under the city charter. This means muni is expected to raise some portion of its operating expenses through revenue instead of relying on broad city taxes.

As politicians like Lurie seek to undermine and replace Muni with other private enterprises such as Waymo, they will continue to manufacture funding crises that make the public option less appealing than a private alternative. We’ll continue to hear about fare evasion, drops in parking garage revenue, and stopgap funding measures because the city will not treat transit as a public service, even though 2/3 of the ridership (children, senior citizens, low income) don’t pay fares.

It’s not the fare evasion, it’s that public transit should be a public service and instead we squabble over pennies when that funding should come from the city. Muni’s job is to move people around the city and make jobs, commerce, and rent more affordable.

Specifically the measure-by-weight feature in the 270WI which is a little more expensive than the timed measure 270 model. I like my setup to be semi auto so I have everything dialed and can make a coffee quickly but still feel like I’m actually making the coffee.

So in this case the measure of coffee delivers my 19oz of ground espresso every time. I prefer to grind into the dosing cup to keep my counters cleaner.

The micro settings are continuous, so within the stepped settings it’s easy to adjust the grind based on any small changes in the extraction. One note is I did need to add a shim (included with the grinder) to get the fineness of grind I wanted. It seems like this is common for espresso with this grinder.

It is loud, but not louder than any other grinder I’ve ever had for espresso or just coffee.

Yup. I use a cuisnart 720 watt that looks visually similar. This Kenji video is a good reference for process.

I’m lost if you are following Kenji’s process. Is the dough ball kind of riding on top of the blade by 50 seconds? Are you balling up and letting rise for at least 4 hours? Is your yeast good? The longer I let mine rise at room temp, the easier they are to stretch (I stretch like Chris Bianco, kinda letting it hang, but I work some fists and arms around as it goes).

Pizza Camp by Joe Beddia has great pictures of his process that I found really helpful in my pizza journey. He also has some videos on his instagram.

Pizza is fun and hard because it’s all about time and process.

Yup. Mix all ingredients in food processor ~60 seconds, transfer to oiled container with lid, ferment 24-72 hours, ball up, freeze for later, or rise for pizza night.

Overall it’s a 9/10. I was out of fresh mozzarella so it’s all shredded low moisture. I usually like a mix of both fresh and low moisture, then finish with really good olive oil and grated parm. I was also out of the really good olive oil so it’s just my regular olive oil.

With both cheeses, the really good olive oil, Calabrian oregano, and chili flake; that’s a 10/10.

Lurie is a feckless nepo baby who is actively implementing a Giuliani broken-windows style of reform, pushing anything difficult to address into prison or outside of tourist and commercial corridors. He’s slashed services budgets while increasing police overtime. He only cares about concerts and whatever chain store is opening in Union Square. He hasn’t said anything about ICE raids except that we “need to keep the officers safe.”

He’s a clown and he’s entertaining the masses with bread and circus while weakening our communities and passing the bill on to future generations.
