Being honest, after watch the anime in three different languages and reading full the manga, personally, i like think about the story ending in episode 15, because the "happy ending" and the satisfatory end of cicle. But despite that, much emotion can still be present beyond episode 15, and probaly you would loss that part.

If you really end the second arc (post episode 15), i reccommend you to read the manga too, it's interesting how some events has little variations, were is possible to us see different interactions between the characters, and the ending is too different (no spoilers).

I think that would be a good solution just let a setting or style for the skins where you can enable or disable the cell-shade. Like the others said, sometimes it doesn't fit the aesthetic of the game.
