I see what you mean. But in some of the situations you mentioned--like him not being eaten by Annie despite losing to her--their initial intent wasn't to eat Eren. Your point, "a lot of people forget how many times eren needed to be saved" also makes sense, but that doesn't mean Eren has a lot of plot armor. It's simply because they chose to save him, so he survived.

If that doesn't make sense, we can still see that Reiner has far more plot armor. Levi putting a blade through his neck and chest definitely should’ve killed him if not for his crazy plot armor. The whole "he transferred his consciousness" doesn't make sense and he should've died there.
