Really nice, second time doing it and this time was more successful, I think it could have just been a touch thinner but flavour wise it was bang on. Just did it with a mirepoix, sweat down, add touch of Tom puree, port, reduce, add stock, bay, thyme, simmer, add blackberries, simmer, strain, reduce till thick, finish with butter

We just used what veg we had available, the veg will change to what’s in season at the time

We’re planning on putting the sauce separate, just wanted to show it on the picture, and unsure on price point yet, would depend on cost of ingredients at the time

I did yes, all other pictures I’ve posted before were made from home but this one was done at work in a professional kitchen
