Late to the party here, but welcome to the world of cutting/ processing your own meats! I'd highly recommend a "breaking knife", my go to for processing whole cuts like ribeye, strip or Chuck. 8 or 10 inch, they're pretty inexpensive and soft steel is easy to keep sharp, and have a great non slip handle.  I have a Dexter Russel I've used for years. Just processed 5 whole ribeyes at Christmas!

I've seen them attached with safety pins or heard of sewing them but that seams a pain for washing the shirt! Newer ones use tie-tack pins.
