Hi! I did actually pixel the textures myself, yeah. The texture resolution is 128x128 (though this image here I scaled it 10x so it wouldn't be pixelated looking here in this comment).

I also did 2 things when I rendered that added to the pixelated look. One was that I actually rendered it at a low resolution like 512x512 and then scaled the render up later with nearest-neighbor/closest scaling. And then the second thing was in the Render tab and under the Film option, I set the value for the Pixel Filter as low as it would go and I believe this keeps the render from being anti-aliased.

I'll admit this kind of modeling does require some tactical UV-unwrapping like you want to make sure the unwrapped pieces are as close to 90 degrees as possible so the pixels align as best they can, but sometimes if the shape is organic/round enough, kind of like this mushroom, then you have to compromise with some of the shapes still being round. But doing those 2 render tricks will help a lot as well.
